For those who love red beets, baby beets in salads and beet greens—Red Cloud is the beet for you. Its high sugar content makes the roots extraordinarily sweet, whether cooked, pickled or canned, and the perfectly round, intense red beets are so attractive, too. Harvest some at the immature stage for sweet, tender baby beets. They're excellent sautéed or in a salad. Red Cloud's full tops are also a great choice for greens. Beets can be grown in the spring or fall garden. For the best germination rate, soak beet seeds in lukewarm water for about 24 hours before sowing. 50-60 DAYS.
