Twice-as-Nice Cucumber Salad

Have an abundant cucumber crop to use up? One of our favorite uses for garden-fresh cukes is a cool cucumber salad. Perfect for lunch on a hot summer day or as a barbeque side dish, we’ve created two variations in our Gurney’s kitchen—one light and tangy, one rich and creamy—so you’ll have a crowd-pleaser on your hands no matter who’s partaking.
Loaded Cucumber Salad
Ingredients
- 2–3 cups fresh cucumbers, thinly sliced
- ½ small red onion, thinly sliced
- 1 cup shredded cheddar cheese
- 6–8 slices bacon, cooked crispy and crumbled
- 1/4 cup mayonnaise
- 1/2 cup sour cream
- 1–2 cloves garlic, minced
- 1 tbsp vinegar (white or apple cider)
- 1 tsp dried dill (or 1 tbsp fresh)
- ½ tsp onion powder
- Salt & pepper to taste
Instructions:
- In a large bowl, combine cucumbers, red onion, cheddar cheese and bacon.
- In a separate bowl, whisk together mayo, sour cream, garlic, vinegar, dill and onion powder, adding salt and pepper to taste.
- Pour dressing over the cucumber mixture and toss until fully coated.
- Chill in the fridge for at least 30 minutes to allow flavors to marinate.
- Stir before serving, and add additional salt, pepper or dill if needed.
Zesty Cucumber Salad
Ingredients
- 3 large cucumbers, thinly sliced
- 1 medium Vidalia onion, thinly sliced
- 6-8 cherry tomatoes, quartered
- 1/2 cup sugar
- 1 cup white vinegar
- 2 cups water
- 1/2 tbsp black pepper
- Salt to taste
Instructions
- In a large bowl, combine cucumbers and onion.
- In a separate bowl or jar, whisk together sugar, white vinegar, water, black pepper and salt to taste.
- Pour dressing over the cucumber mixture and toss until fully coated.
- Chill in the fridge overnight to allow flavors to marinate.
- Add cherry tomatoes 1 hour before serving and mix well.
