Gurney’s Garden Fresh Salad

A vibrant, satisfying salad with fresh greens, colorful veggies, healthy fats and whole grains — perfect for a balanced meal that’s as delicious as it is nourishing.

Ingredients:

Optional Toppings:

  • Crumbled feta or goat cheese
  • Croutons
  • Lemon zest or fresh herbs (parsley, dill, or basil)

Dressing: Lemon-Garlic Vinaigrette

  • 3 tbsp olive oil
  • Juice of 1 lemon
  • 1 clove garlic, minced
  • 1 tsp Dijon mustard
  • Salt & pepper to taste

Whisk together until well combined.

Instructions:

  1. In a large bowl, combine spinach and lettuce; add carrot, tomato, onion, cucumber and cabbage.
  2. Drizzle with lemon-garlic vinaigrette and toss gently to combine.
  3. Top with cheese or croutons (optional) for added texture and flavor.
