Gotta-Have-It Cottage Pie

When you need a dependable crowd-pleaser, our Cottage Pie delivers every time. This classic comfort dish combines ground beef, fresh-from-your-garden vegetables and rich gravy, topped by mashed potatoes baked until golden. It’s hearty enough for a chilly evening, simple enough for a weeknight and satisfying enough to earn a spot in your regular rotation.
Ingredients:
For the mashed potato topping:
- 3-4 large potatoes, peeled and cubed (Yukon Gold and Russets are best for mashing)
- ½ cup milk
- 3 tbsp butter
- 2 tbsp chopped chives
- Salt to taste
For the filling:
- 1 lb. ground beef
- 1 small yellow, diced
- 2–3 cloves garlic, minced
- 2 tbsp flour or 1 packet beef gravy mix
- 1 cup corn (such as Gotta Have It® or Simply Irresistible®)
- 1 cup peas
- 1 cup carrots, diced
- 1 cup green beans, chopped
- Salt and pepper to taste
Instructions:
- Place potatoes in a large pot and cover with cold salted water. Bring to a boil and cook 15-20 minutes until fork-tender. Drain, then mash with butter and milk until smooth. Stir in chives and salt; set aside.
- Preheat oven to 400°F.
- In a large skillet over medium heat, cook ground beef until browned. Drain excess fat if needed. Add onion and cook 3-4 minutes until softened. Stir in garlic and cook 30 seconds.
- For the gravy:
- If using flour: Sprinkle flour over the meat and stir for 1 minute. Slowly add beef stock, stirring until thickened.
- If using gravy mix: Add beef stock and whisk in gravy mix according to package directions.
- Stir in corn, peas, carrots and green beans into beef and gravy mixture. Simmer 5-8 minutes until vegetables are tender and filling is thick. Season with salt and pepper.
- Spread the filling evenly into a baking dish. Spoon mashed potatoes over the top and rough up the surface with a fork.
- Bake 20-25 minutes until the filling is bubbling and the potato topping is lightly golden. For extra browning, broil 2-3 minutes at the end if desired.
- Let cool slightly before serving.
