Garlicky Zucchini & Potato Fritters

Turn your garden harvest into an irresistible side dish with these crispy fritters. Fresh-picked zucchini, potatoes, garlic and herbs transform into golden, pan-fried patties with tender centers and perfectly crisp edges. Paired with a cool, creamy dill dip, they're an easy way to showcase the fresh flavors of the season.
Ingredients:
- 1 medium zucchini, shredded
- 1 medium potato, peeled and grated (Yukon Gold or Russet Potatoes recommended)
- ½ small yellow onion, finely diced or grated
- 2–3 cloves fresh garlic, minced
- 2 large eggs
- 2 tbsp fresh parsley (or dill/chives), chopped
- ½ tsp salt
- ¼ tsp black pepper
- 2–3 tbsp oil for frying (vegetable or olive oil)
Instructions:
- Shred the zucchini and grate the potato. Place both in a clean towel and squeeze out as much liquid as possible (this is key for crisp fritters).
- In a bowl, combine zucchini, potato, onion, minced garlic, eggs, herbs, salt and pepper. Mix well until it holds together.
- Warm oil in a skillet over medium heat.
- Scoop fritter mixture into small portions, pressing gently into patties.
- Fry 4–5 minutes per side, until golden brown and crispy on the edges.
- Remove and place on paper towels to absorb excess oil. Dip or drizzle with Creamy Dill Dip, recipe below.

- Stir in lemon juice, salt and pepper until smooth and well blended.
- Drizzle in olive oil, if using for a richer texture.
- Chill for 10–15 minutes before serving to let flavors meld.
