Fresh Fiesta Corn Salsa

Celebrate the sweet, tender flavor of homegrown sweet corn with this colorful salsa. Made with fresh-picked produce from your own backyard, it’s perfect with tortilla chips, spooned over grilled chicken or fish, or served as a colorful side dish. What we really love is how this recipe highlights the crisp textures and vibrant flavors that make homegrown veggies so special!
Ingredients:
- 4 ears sweet corn, kernels removed (We love (sh2) types like Honey ‘n Pearl or Fourth of July corn for this!)
- 2 ripe tomatoes, diced
- 1 bell pepper, diced
- 1 small red onion, finely chopped
- 1 jalapeño pepper, seeded and minced (optional)
- ¼ c. fresh cilantro, chopped
- 1 lime, juiced
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions:
- Bring a large pot of water to a boil and cook corn for 3-5 minutes until tender. Allow to cool, then carefully cut kernels from the cob.
- In a large bowl, combine corn kernels, tomatoes, bell pepper, red onion, jalapeño and cilantro.
- Drizzle with lime juice and olive oil, then gently toss until combined.
- Season with salt and pepper to taste.
- Refrigerate for 30 minutes before serving to allow the flavors to blend.
