Carrot Zucchini Pumpkin Bread with Lemon Glaze

Put your garden haul to delicious use with this moist, warmly spiced bread. Carrots, zucchini and pumpkin pair perfectly with a crunchy nut topping and bright lemon glaze, creating a flavorful treat that’s perfect for breakfast, snacking or sharing.
Makes two 9×5 in. loaves.
Ingredients:
- 3 large eggs
- 1 cup vegetable oil
- 1 cup granulated sugar
- ¾ cup packed brown sugar
- 1 cup pumpkin purée
- 2 tsp vanilla extract
- 1 cup finely shredded carrots
- 1 cup shredded zucchini, lightly squeezed
- 3 cups all-purpose flour
- 2 tsp ground cinnamon
- ½ tsp ground nutmeg
- ½ tsp ground ginger
- 1 tsp baking soda
- 1 tsp baking powder
- ¾ tsp salt
- 1½ cups chopped pecans or walnuts
Lemon Glaze
Whisk the powdered sugar with 2 tablespoons of lemon juice and the optional zest. Add more lemon juice as needed to reach a drizzling consistency.
Instructions
- Preheat the oven to 350°F. Grease and flour two 9x5 in. loaf pans.
- Whisk together the eggs, oil, granulated sugar, brown sugar, pumpkin and vanilla.
- Stir in the shredded carrots and zucchini.
- In a separate bowl, combine the flour, cinnamon, nutmeg, ginger, baking soda, baking powder and salt.
- Add the dry ingredients to the wet mixture. Stir just until combined, then fold in the chopped nuts.
- Divide the batter evenly between the prepared pans.
- Bake for 50–60 minutes, until a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Cool in the pans for 15 minutes, then transfer the loaves to a wire rack. Let them cool completely.
- Drizzle the lemon glaze over the cooled loaves and allow it to set before slicing.
For extra crunch, reserve about ¼ cup of the nuts and scatter them over the batter before baking!
