Mild-Flavored Italian Heirloom
Large, round, pleated fruits are deep purple with hints of cream near the stem. The Italian heirloom variety has a mild flavor and tender white flesh, making it a favorite for eggplant parmigiana and other specialty dishes. Its flesh is slow to discolor when sliced. Harvest eggplant when the skins are very shiny. Dull skin indicates the fruits are too ripe. Store eggplant in a cool, dark place and handle carefully. Start eggplant seeds indoors about 8-10 weeks before night temperatures are above 55 degrees. Plants may be set outdoors after night temperatures are above 55 degrees.
