Generations of gardeners have loved horseradish roots for their pungent, peppery and tangy flavor. Our Hybrid Horseradish is a hardy perennial with good disease resistance, and it produces high yields of roots. The plants grow 2-3 ft. tall and have oblong, puckered, dark green leaves. The roots can be dug up in the spring or fall, then peeled and grated. Grated roots have a delightful tang and are often used as a condiment. Once the root is grated, though, it must be used or mixed with vinegar because it becomes bitter and unpleasant when exposed to air and heat for an extended amount of time.
